Out of This World

The Martian sun has barely risen above the horizon, and the sky, instead of Earth’s familiar blue, glows with a soft salmon hue, shifting from peach to pale rose. Unlike Earth, where the sky is blue and sunsets turn red, Mars reverses the pattern. Fine suspended dust and the planet’s thin atmosphere filter light in unfamiliar ways, painting dawn in colors from another world.

Against that strange canvas, the two moons of Mars can be seen: Phobos, swift and restless, crossing the sky several times each day; and Deimos, distant and slow, almost imperceptible, like a wandering star.

In the gastronomic district of New Recife, one of the most vibrant colonies on the Red Planet, stands Out of This World, a restaurant popular among colonists, scientists, tourists, and interplanetary transport crews.

At 04:00 of the first decisol, long before the first customers arrive, Jaider, the food quality supervisor, is already awake.

Jaider is a young man of Colombian-Venezuelan ancestry, born on Mars, who inherited from his grandmother a love for traditional cooking. His day begins by reviewing the inventory of fresh ingredients arriving from the vertical farming laboratory: elongated Martian lettuces, intensely pigmented spheroidal tomatoes, and, above all, the highly anticipated avocados grown under variable gravity to achieve the ideal texture.

At the center of the restaurant, three SAR-C culinary robots — Autonomous Pastry and Cooking Systems — are already at work. One mixes the arepa dough, another bakes it on circular induction plates, and the third monitors the internal temperature of each one.

Jaider checks the cooking point carefully: golden on the outside, soft on the inside.

The bullfrog meat, raised in humidity-controlled biodomes, has already been processed and refrigerated. Its rich umami profile makes it an ideal substitute for chicken.

The Martian reina pepiada, one of the restaurant’s signature dishes, combines mashed avocado, shredded frog meat, freeze-dried onion, and a touch of egg-free mayonnaise. The mayonnaise is produced through an emulsion of vegetable oils and algae rich in Martian lecithin, achieving a texture and flavor nearly indistinguishable from the original.

By 07:00 decisol, the first customers begin to arrive: students from the University of New Recife, terraforming workers, tourists, and the occasional pilot who landed the night before.

The atmosphere is calm but active. Some guests prefer human servers, while others choose the automated service option, where neutral-faced androids take orders, deliver dishes, and collect utensils.

The human-robot collaboration is perfectly choreographed. Androids handle repetitive and physically demanding tasks, while humans provide personal attention, final presentation, and supervision of critical details.

Jaider coordinates both worlds naturally: a gesture toward an android here, a smile to a customer there, a quick check of the kitchen emulsions before the next wave of orders.

The Martian workday is divided into four decisols, with rotating shifts designed to reduce fatigue. At 11:00, the guard changes. Jaider hands his digital logbook to Mireya, the chef of the second shift, who oversees the more elaborate preparations: spirulina-lentil pasta, Martian cacao cake, and the evening variations of the restaurant’s immersive menu.

Outside the restaurant, the sky has changed again. The Martian sun, smaller than the one remembered from Earth, now hangs higher above the dome, casting soft shadows across the reddish ground.

Jaider walks back toward the residential module with the quiet satisfaction of having fed the heart of the colony, one bite at a time.

On Mars, every day is extraordinary precisely because of what has become ordinary.
